What comes from an unconventional combination of carrot and cream cheese? One delicious Carrot Cake Cheesecake with low fat content and supple consistency. We guarantee that you will enjoy it with your whole family. Let´s prepare it!
Ingredients for dough:
- 200 g wholemeal spelled flour
- 150 ml milk
- 140 g carrot (one larger carrot)
- 100 g apple puree (baby food without sugar)
- 70 g coconut sugar
- 1 egg
- 1 tbsp lemon juice
- 2 tsp cinnamon
- 2 tsp of baking powder
- 1 tsp baking soda
- ½ tsp ground ginger
Ingredients for cream:
- 250 g cream cheese
- 25 g protein Just Whey with vanilla flavor
- 15 g vanilla pudding powder
- 1 egg
- sweetener up to your taste
First of all, mix flour with cinnamon, ground ginger, soda, baking powder and coconut sugar in one bowl. Then finely grate the carrot and add it to the dough together with egg, milk, lemon juice and apple puree. Knead the dough thoroughly so that all ingredients come together.
Prepare the cream by mixing cream cheese, protein, pudding powder, egg and sweeten with any sweetener up to your taste. Pour the dough and cream alternately into the greased cake tin (we used 20 cm in diameter). Bake the cake for 25 minutes at 180℃, then lower the temperature for 160℃ and bake for another 25 minutes. After baking, let the cake cool, cut and serve. Bon appetite!
