What do perfect cupcakes look like? The foundation is a fluffy and smooth sponge that literally melts on the tongue. However, the sweet cream, which is ideally packed with protein, is not to be missed. And of course, the ultimate highlight is the fruit, which adds a fresh touch to the whole treat. Our Matcha cupcakes meet all these criteria. What’s more, they attract attention at first sight with their greenish colour. In short, they are a great treat that can be enjoyed either as a dessert, snack or breakfast.
Ingredients for the dough:
- 200 g low fat quark
- 180 g fine spelt flour
- 100 ml skim milk
- 50 ml coconut oil
- 30 g vanilla protein
- 8 g Matcha powder
- 2 eggs
- ½ tablespoon baking powder (approximately 6 g)
- spray oil
Ingredients for the garnish:
- 100 g low fat quark
- strawberries
- Flavor Drops or any other sweeteners according to taste

Method:
In a larger bowl, mix the sifted flour with baking powder, vanilla protein and Matcha powder.

In a second bowl, combine the milk, eggs, melted coconut oil and whisk everything thoroughly with a whisk. Then add the quark and whisk again. Gradually stir in the dry ingredients to make a smooth batter.

Then take a cupcake tin, spray it with oil spray (you can also line the tin) and use a spoon to evenly distribute the batter into the cupcakes. The whole quantity should make about 12 pieces. Place the tin with the prepared dough in an oven preheated to 190°C and bake for about 20 minutes. Let the baked cupcakes cool and then decorate. For this, use quark flavoured with Flavor Drops or other sweetener as desired. And don’t miss the finishing touch of a strawberry on top.
