Vegetable salads are a great choice for a light dinner. And they are so easy to prepare and digest. However, the disadvantage is that they don’t always satiate enough. We solved this common problem by adding black lentils and cheese, which gave the salad a lot of protein and fibre. In combination with popular vegetables, we created a tasty, nutritious, but also filling meal! Join us to try this warm salad made of black lentils and served with roasted carrots, avocado and feta.
- 200 g carrots
- 200 g red onion
- 120 g black lentils
- ½ avocado (80 g)
- 70 g feta cheese
- 2-3 handfuls of salad rocket/pea sprouts
- salt, ground black pepper and lemon juice to your taste
- olive oil spray

Peel red onion and cut it into slices. Peel carrots as well and cut them into slices. Place the carrots and onions on a baking sheet lined with baking paper, spray the vegetables with olive oil, add salt, seasoning and bake for about 30 minutes at 180 °C until tender. In the meantime, rinse the lentils and cook them until tender. Mix baked vegetables with lentils, chopped avocado, pea sprouts/salad rocket and crumbled feta. Season the salad with salt, pepper, lemon juice and serve. Enjoy your meal!
