Fitness Recipe: Juicy Baked Chicken with Potatoes and Vegetables

Just put everything in one baking tray and let the oven do all the work. Once it’s done, you just have to decide whether to split the chicken into several boxed lunches or enjoy it together with the whole family.

Method:

Peel the potatoes and onions and cut them into slices. Clean and peel the carrots and parsley and cut them into smaller pieces. Mix the vegetables and potatoes with 2 tablespoons of olive oil, 1 teaspoon of sweet pepper, a little ground black pepper, 1 teaspoon of salt and 4 stems of thyme. Then transfer everything to the baking tray. Brush the chicken with the remaining olive oil from all sides, sprinkle it with black pepper, salt and half a teaspoon of sweet paprika. Put the remaining thyme springs inside the chicken and tie the chicken’s legs with kitchen string so that it cooks evenly. Place it on top of the potatoes and vegetables and cover with water.

Cover the whole baking tray with aluminium foil and bake for an hour at 200 °C. During baking, check at least 2 times if the water has not evaporated and, if necessary, add some more to prevent the chicken from burning. Every time you check, it’s a good idea to pour some of the juice over the chicken. Then, to make sure that it comes out golden brown, put the foil aside, turn on the grill function on your oven and bake for 20 more minutes. Then take everything out and it’s ready to be served. When serving, don’t forget to cover the meat with some of the tray juice, which will give the food the right taste.
