Looking to try a new sweet breakfast or have a nutritious lunch that will keep you full? Then you definitely have to try these delightful crepes with quark. The thin batter with a generous amount of filling becomes even more flavourful after baking. And, of course, we can’t forget about the almond flakes that add a perfect aroma to the entire dish. Well, who could resist?
Ingredients for the batter:
- 400 ml semi-skimmed milk
- 120 g plain flour
- 120 g spelt wholemeal flour
- 20 ml olive oil
- 20 g xylitol
- 2 eggs
- a pinch of salt
- olive oil spray for frying
Ingredients for the cream:
- 500 g of low-fat quark
- 50 g xylitol
- 30 ml maple syrup
- 1 egg white
- zest of 1 lemon
Ingredients for the glaze:
- 200 ml semi-skimmed milk
- 20 g xylitol
- 1 egg yolk
- 1 tsp vanilla extract
Ingredients for the finishing touches:
- 15 g almond flakes
- fresh mint
- 5 g icing sugar

Method:
Start by preparing the crepes batter. Mix both flours with xylitol and a pinch of salt. Then add the oil, egg and milk and whisk thoroughly until smooth. Take a pan, spray it with cooking spray, and fry the crepes until golden on both sides. Repeat the process until all the batter is used.
Next, let’s prepare the cream. Mix the quark with xylitol, maple syrup, egg whites and finely grated lemon zest. Spread the quark mixture evenly over each crepe. Then fold each crepe in half and then fold it again to form filled triangles. Place the prepared crepes in a baking dish.
Then, prepare the glaze by mixing the milk with xylitol, egg yolk and vanilla extract. Evenly pour the glaze over the prepared crepes in the baking dish. Finally, sprinkle them with almond flakes and bake at 180°C for about 25 minutes until golden brown. Serve the crepes while still warm, dusted with icing sugar and garnished with fresh mint.
