Fitness Recipe: Pulled Chicken Burger

If you love burgers as much as we do, you’re in for a treat today. We’ve crafted a gourmet version with healthy coleslaw and tender pulled chicken that’s simply divine. And of course, a soft bun filled with all these delights, paired with barbecue sauce, is a must.

Ingredients for the pulled meat:

Ingredients for the coleslaw:

  • 100 g low-fat Greek yogurt
  • 60 g spring onions
  • 1 carrot
  • 1 tsp Dijon mustard
  • ¼ red cabbage
  • maple syrup to taste (we used about 5 g)
  • apple cider vinegar to taste
  • salt to taste

To put it all togeher, you’ll need:

  • 4 whole grain buns (one of our buns weighed about 90 g)
  • barbecue sauce to taste

Method:

Clean and season the chicken breasts with salt, pepper, and sprinkle with ground sweet paprika on both sides. Then heat a pan with oil and sear the meat until golden brown. Next, add water to the pan, cover with a lid, and simmer for about 15 minutes. Shred the chicken breasts into smaller pieces using a fork, mix them with the water they were cooking in, and barbecue sauce. If you decide to use ready-to-use chicken, simply mix it with 6 tbsp of barbecue sauce and add water or broth as needed. Season with salt and pepper to taste.

Slice the red cabbage into thin strips, grate the carrot coarsely, finely chop the spring onions, and combine the vegetables in one bowl. Add yoghurt, mustard, and season the salad with maple syrup, vinegar, and a pinch of salt to taste.

Once everything is prepared, it’s time to assemble. Slice the buns in half, spread with barbecue sauce, layer on the pulled chicken, add coleslaw, then top with the other bun half, and you’re burgers are ready to go.
