On a chilly autumn day, there is nothing better than a warm creamy soup. We love it for easy preparation and perfect flavour that is just irreplaceable. On top of that, when it is also nutritious and satiates, nothing holds us back. We’ve prepared for you a delicious recipe for creamy red lentil soup with pumpkin seeds. It combines all the benefits offered by fresh vegetables and nutritionally packed legumes. Let’s start cooking!
- 300 g red lentils
- 4 carrots
- 1 onion
- 2 garlic cloves
- vegetable broth
- 1 tbsp ghee
- salt, black pepper, turmeric
- 12% light cream
- pumpkin seeds

Sauté the chopped onion, garlic, and all seasonings in a pot in ghee. Then add the sliced carrots and sauté it all for a while. In the meantime, rinse lentils, add them to the pot together with the vegetable broth, and add 500 – 700 ml of hot water. Cook the soup for about 30 minutes until the lentils and carrots soften. When the soup is ready, blend it with an immersion blender. Before serving, toast pumpkin seeds in a pan and then serve the soup with the seeds, or garnished with cream and chilli powder.
