Fitness Recipe: Yeast-Raised Jelly Doughnuts with Quark Cream

There’s no need to be afraid of yeast dough. Even though the preparation may seem complex, anyone can handle it. Once it reaches the ideal consistency, all you need to do is to cut out the jelly doughnut shapes and bake them. Then it’s just up to you how to decorate them. We opted for a combination of quark cream and strawberry Jammy Spread.

Method:

Start by preparing the dough. Mix 150 g of fine spelt flour with 50 g of wholemeal spelt flour, 30 g of cane sugar, and a pinch of salt. Heat the milk, but make sure it doesn’t get too hot. Add the remaining 5 g of sugar, dried yeast, and let it sit for 5 minutes to activate the yeast. Then, add it to the flour mixture, add the softened ghee, and knead a smooth dough. The ideal consistency is reached when you see bubbles form on the dough. If your hands get sore during kneading, you can use a mixer with a dough hook. Leave the prepared dough in a bowl, cover it with a damp cloth, and let it rise in a warm place for about an hour.

Roll out the risen dough on a floured surface to a thickness of about 2 cm, and using a round cutter or a glass, cut out small circles.

Line a baking sheet with parchment paper and place the circles on it with enough space between them. Once they are on the sheet, let them rise for another 30 minutes, then brush them with oil and bake for about 15 minutes until golden brown at 180°C. When they’re done, let them cool.

Now you’re getting close to the finish line. Whisk the quark with protein powder and decorate the finished jelly doughnuts with this cream and strawberry Jammy Spread. Finally, sprinkle everything with some icing sugar.
