Fitness Recipe: Vegetable Egg Stew

This stew is a great way to get more vegetables in easily. For example, if you don’t feel like cold salads in winter, it’s the perfect choice. It’s ideal as a lighter dinner. And if you’re worried about getting hungry anytime soon, you can eat it with bread or add a protein source. What you choose it is entirely up to you.

Ingredients:

  • 300 g ripe tomatoes
  • 300 g paprika
  • 3 eggs
  • 1 large onion
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • ground black pepper to taste
  • salt to taste
  • fresh parsley for plating

Method:

Finely chop the onion, peppers and tomatoes into smaller pieces. First, sauté the onions in a pan with hot oil. Then add the smoked paprika and the chopped peppers, sauté for approximately 5 minutes. Finally, add the tomatoes and sauté until soft.

Add the eggs, salt and black pepper to taste and sauté the entire mixture for a while. Finally, add the parsley and serve.
