Method:

Preheat the oven to 180 °C and prepare a muffin pan, lining it with silicone or paper liners. If you don’t have them at hand, grease the pan with cooking spray. Now, let’s start preparing the batter. In a bowl, mix both flours, beetroot powder, protein powder, baking powder, and a pinch of salt. Mix everything thoroughly. Afterwards, add the eggs, milk, oil, vanilla Flavor Drops, and mix until everything is well combined, resulting in a smooth batter. Then, proceed with dividing the batter into the prepared liners, filling each about ¾ full. This should yield approximately 12 cupcakes.

Place the prepared pan with liners in the preheated oven and bake for 20–30 minutes. To check if they’re done, use a toothpick. If it comes out dry after being inserted into a cupcake, they are ready. Once baked, remove them from the oven and let them cool.

While the cupcakes are cooling, it’s time to prepare the garnishing. Melt 35 g of dark chocolate in a silicone bag using either a microwave or a double boiler. Let it cool slightly to maintain a liquid consistency. In another bowl, combine the quark with vanilla Flavor Drops and beetroot powder (5 g). Incorporate the cooled chocolate and add whipped cream stabilizer according to the instructions to make the cream firmer and easier to work with. Mix everything, do a taste test, and adjust the flavour by adding more Flavor Drops if needed. Transfer the cream to a pastry bag and use it to garnish all the cupcakes. Finish by sprinkling grated white chocolate on top, and you’re done.
