Do you avoid soups because they leave you feeling hungry quickly? That won’t happen with this one. Thanks to the beans and protein pasta, it’s packed with protein to keep you full. And, of course, there are plenty of fibre-rich vegetables. This makes for a nutritionally rich soup that tastes great and has a captivating aroma. Perfect for lunch and dinner.
Ingredients:
- 400 g tinned chopped tomatoes
- 300 g black beans
- 150 g protein pasta
- 150 g celery stalks
- 4 cloves of garlic
- 2 medium sized carrots
- 2 tablespoons olive oil
- 1.5 litres of vegetable stock
- 1 onion
- 1 handful of parsley + for garnishing
- 1 teaspoon dried basil
- salt to taste
- ground black pepper to taste

Method:
Finely chop the onion and garlic, chop the carrots and celery into small pieces. Heat the oil in a large pot, fry the onion, carrots, celery and after a while throw in the garlic. Next, add the chopped tomatoes, vegetable stock, rinsed beans, dried basil and cook the soup until the vegetables are soft. When the soup is boiling, put the protein pasta in salted water in another pot and cook according to the instructions.
At the end of cooking, season the soup with salt and pepper and stir in a handful of chopped parsley. Then remove it from the heat and stir in the cooked protein pasta. And you’re done. When serving, garnish with chopped parsley.
