Ingredients for the pastry:
- 200 g wholemeal flour
- 50 g xylitol
- 2 egg yolks
- 50 ml canola oil
- 30 ml low-fat milk
- 2 tsp baking powder

- 150 g soft non-fat quark

Method:
Mix the flour with xylitol and baking powder. Add the egg yolks, milk and oil and work into a firm and non-sticky pastry. Crumble two-thirds of the pastry and press it into the bottom of a baking tray (20×20 cm) lined with baking paper. In a bowl, mix the coarsely grated apples mixed with the cinnamon and coarsely chopped walnuts. Spread the mixture evenly over the pastry on the baking paper.
Beat the egg whites with the xylitol until stiff and gently fold in the quark. Spread the cream layer evenly over the apple layer and top with the remaining crumbled pastry.
Place the prepared dessert in a preheated oven at 180 °C and bake for 25 minutes. Let cool completely before cutting.
