Today, we’ve taken a simple twist to transform this everyday dish into a luxurious breakfast delight, by introducing just two additional ingredients. In our case, we chose spinach and Parmesan. The result is truly delightful – see for yourself.

Heat the olive oil in a pan and sauté the baby spinach for 2–3 minutes. Next, crack and beat the eggs and add them to the spinach. Cook over low heat, stirring continuously, until the eggs thicken. Finally, season them with salt and pepper, toss in the grated Parmesan, and give them a good stir. Once done, the meal is ready to be served right away.
