Fitness Recipe: Roasted Chicken Thighs with Chickpeas

Method:

Peel and slice the onions into half-moons. Clean and cut the carrots into smaller pieces. Rinse the chickpeas, drain them, and place them in a baking dish along with the carrots and onions. In a small bowl, mix olive oil with crushed garlic, ground sweet paprika, smoked paprika, ground cumin, and salt to taste. Stir thoroughly. Combine ⅔ of this oil mixture with the vegetables in the baking dish. Next, take the prepared chicken thighs and season them with salt and black pepper to your liking.

Finally, we coat the chicken with the remaining ⅓ of the oil mixture and place it on top of the prepared vegetables. If needed, add some water to the baking dish. Cover the dish with a lid (if available) or use aluminium foil. Place it in a preheated oven at 200 °C (392 °F) and bake for 40 minutes. During this time, you can check the chicken, turn it over, and add water if necessary. Afterward, remove the lid from the baking dish, turn the chicken skin-side up, and continue baking for an additional 20–30 minutes to make the skin nice and crispy. Serve the dish garnished with fresh parsley sprigs. Mashed potatoes make an excellent side dish for this roasted chicken with chickpeas.
