Ingredients for the rolls:
- 200 g prawns (or chicken)
- 90 g thin rice noodles
- 8 pcs rice paper (diameter 22 cm)
- 2 pcs of small carrots
- 1 pcs slicing cucumber
- lettuce as needed
- a handful of coriander leaves

First, cook the noodles according to the instructions. Drain them, rinse under cold water and put aside. Then cook the prawns and let them cool. If you chose chicken instead of prawns, cut it into thin strips and fry gently in olive oil. Next, peel the cucumber and carrots and cut them into thin stripes. Dip the rice paper in water for a few seconds and then carefully place it on a clean cloth. This way it’s easier to manipulate. Cover the bottom third of the paper with a few pieces of lettuce, followed by a small handful of rice noodles and a few stripes of carrot and cucumber. If you like coriander, feel free to add it on top. Pick up the sides of the spring roll and fold them creating a burrito and finally roll it all the way. Repeat the same procedure with other rolls. Finally, prepare the sweet chilli sauce by mixing peanut butter, soy sauce, water, agave syrup, oil, chilli sauce and add a few drops of lime.
