Fitness recipe: Poppy seed cake with cherries and a dose of protein

Do you love poppy seed snacks? Then you will surely love this recipe oatmeal cake with cherries full of protein. In addition to its unique taste, it has one big plus – it is in fitness version, which will be appreciated by all enthusiasts of healthy lifestyle. Let´s do it!

Ingredients for dough:

  • 300 g instant oatmeal
  • 300 ml water
  • 200 g acidophilic milk or kefir
  • 150 g cherries (without stones)
  • 80 g sweetener xylitol
  • 40 g ground poppy seeds
  • 30 g protein True Whey (vanilla or no flavor)
  • 3 eggs
  • 2 TBS olive oil (or different oil)
  • 1 baking powder
  • peel of 1 lemon
  • almond or different butter (for pouring – optional)

Instructions:

Pour all solid ingredients into big bowl oatmeal, xylitol, poppy seeds, protein, baking powder, lemon peel and mix properly. Then add all liquid ingredients to the mixture – water, acidophilic milk, eggs, oil, and mix together until smooth. Add drained cherries without stones into dough and mix again.

Pour the dough into silicon bundt cake form and bake for 50-55 minutes at 160°C. After baking, let it cool and then pick it from bundt cake form. We can serve it topped with favorite nut butter. Yummy!
