Fitness Recipe: Pesto Chicken Couscous

New ideas for lunchbox meals are always useful. Fortunately, chicken breast is a versatile ingredient that you can prepare differently every time. Today, we decided to combine it with couscous, vegetables, and basil pesto, which perfectly ties the whole dish together. We ate our meal while it was still warm, but during hot summer days, it can be enjoyed cold as well.

Method:

Start by cutting the chicken breasts into smaller, bite-sized pieces. Season them with a pinch of salt and black pepper according to your taste preferences. Heat a generous tablespoon of oil in a large pan and sear the chicken pieces until they turn a beautiful golden colour. Once cooked, set the chicken aside for now. Using the same pan, add finely chopped garlic and let it sizzle for a moment. Then, add the frozen beans, peas, and halved cherry tomatoes to the pan, and give them a quick sauté. Return the seared chicken to the pan, add the basil pesto and mix everything thoroughly. At this point, feel free to adjust the seasoning with a sprinkle of salt and pepper if needed. Once the flavours have melded together, remove the pan from the heat.

Combine the couscous with dried basil, a pinch of salt, and pour boiling water over it (follow the instructions on the package, typically using a ratio of 2 parts liquid to 1 part couscous). Cover the couscous with a lid, let it sit for 5 minutes, and then fluff it up with a fork. Now that everything is prepared, it’s time to serve. Start by placing a bed of couscous on a plate, and then top it with the chicken and vegetable mixture. For an extra touch of freshness, garnish with some basil or other herbs of your choice.
