Fitness Recipe: Kefir Blueberry Bundt Cake

Today, we’ve created a bundt cake that’s easy to prepare, but it certainly doesn’t compromise on taste, quite the opposite. Sweetness is guaranteed by blueberries, xylitol, and protein. Its notable feature is its moistness, which is ensured primarily by kefir. This bundt cake pairs wonderfully with coffee or tea.

Method:

An hour before starting the preparation, take the eggs and kefir out of the fridge. Also, prepare the bundt pan by greasing it with cooking spray and dusting it with coarse flour or semolina.

Then, let’s start preparing the batter, which is very straightforward. In a bowl, combine the kefir, oil, eggs, and Flavor Drops, and mix everything thoroughly. In another bowl, mix the dry ingredients, namely the flour, xylitol, protein powder, baking powder, and salt. Carefully fold the dry ingredients into the wet ones and create a smooth batter. Finally, add the blueberries and mix them in. If the batter appears too runny, add a bit of flour. If it seems too thick, add a bit of kefir.

Kefir Blueberry Bundt Cake - Method

Pour the batter into the greased and dusted bundt pan and place it in the oven preheated to 175°C. Bake for approximately 50 minutes. To check if it’s done, insert a skewer, and if it comes out dry, you can remove the bundt cake from the oven. Let it cool in the pan for a while, then invert it onto a wire rack and let it cool completely.
