Celebrate love with a delicious heart-shaped pavlova that contains no added sugar despite its sweet taste. This protein-packed treat is proof that even a dessert can taste sinfully good without adding any dizzying value to the calorie count.
For the base, you will need:
- 170 g erythritol
- 150 ml liquid egg whites
- 2 tsp cornstarch
- 1 tsp lemon juice
- ½ tsp beetroot powder
- a pinch of salt
To Complete It, We Will Need:
- 250 g low-fat curd cheese
- 25 g lyophilised strawberries
- Strawberry or vanilla flavour drops as needed (can be omitted)

Instructions:
Let’s start by preparing the base. Whisk the liquid egg whites into a foam with a pinch of salt. Gradually sprinkle in erythritol, which you have previously ground into powder, spoonful by spoonful, while constantly whisking. Whisk the egg whites until they are thick, firm, and glossy, which may take up to 10 minutes. Finally, briefly whisk in the lemon juice, starch, and beetroot powder.
Form a heart from the egg white mixture on a baking sheet lined with baking paper. The middle should be lower, the edges higher. Preheat the oven to 100 °C and bake the egg whites in it for approximately 90 minutes.

After baking, just slightly open the oven and let the pavlova cool completely to prevent it from cracking.
Lightly flavour the curd cheese with flavour drops. There is no need to sweeten it too much; the base is sweet enough. Place the curd cheese in the middle of the pavlova and then decorate it with slices of lyophilised strawberries. Then you can serve it immediately.
