Let’s start by preparing the bottom part of the tarts. Mix all the ingredients – oats, coconut oil and maple syrup in a bowl and add hot water.

Cover the bowl with a lid so everything gets nice and warm and let it sit for 10 minutes. Then mix everything thoroughly once more and divide the mixture into 8 equal parts. Then take 8 silicone cups, which you can spray with oil for easy removal of the desserts later. Place an even layer of oat mixture on the bottom of each cup and press it down. Place the prepared cups in the freezer for 10 minutes to set.

Meanwhile, you can prepare the cream. Put all the ingredients – quark, frozen berries, strawberry protein powder and maple syrup – in a bowl. Mix with a hand blender or whisk until a cream is formed.

Protein Cheesecake Tarts - Fruit Cream

Just before filling the tarts with cream, add xanthan gum to the mixture and mix thoroughly. This will help you maintain the optimal consistency. Divide this cream evenly among your 8 cups and return them to the freezer, this time for 20 minutes.

While the tarts with the first cream layer are cooling, prepare the last part, which is the white cream. Whisk all the ingredients – quark, Greek yoghurt, and Flavor Drops – together and evenly distribute this part into the set cups. Then put them back in the freezer, this time for 90 minutes, and you’re done. Then simply remove these ice desserts from the cups and they’re ready to be served.
