Fitness recipe: Simple apple cake with curd, nuts and cinnamon

Ingredients for dough:

  • 200 g wholemeal spelt flour
  • 250 g fine curd
  • 30 g xylitol (Gymbeam)
  • 20 ml coconut oil
  • 1 egg
  • 20 ml of water

Ingredients for filling:

  • 400 g apples
  • 30 g walnuts
  • 30 g raisins
  • 30 g xylitol
  • 1 teaspoon of cinnamon

First of all, prepare the dough. Mix the flour with xylitol, curd, egg white, coconut oil and make a firm dough using your hands. You can add a little water to the dough while mixing. Then put the dough in the fridge for half an hour.

In the meantime, we prepare the filling. Peel the apples and grate them coarsely. Add raisins, chopped walnuts and cinnamon to them. If the apples are not sweet enough, 30 g of xylitol may be added to the mixture. The filling is ready, so now we check whether half an hour has passed so we can remove the dough from the fridge.

Roll out the dough on a floured board or on baking paper and apply the apple mixture evenly. Wrap the cake prepared in this way and spread the egg yolk over the top. Bake the apple roll at 180° C until golden brown, approximately for 25 minutes.
