When soft dough meets crunchy almonds on the surface, it can’t go wrong. The preparation is not at all complicated, and it will be baking in the oven in no time. You can enjoy it with a cup of coffee or any other hot beverage.
Ingredients:
- 150 g plain flour
- 120 ml semi-skimmed milk
- 60 g cane sugar
- 40 g whole poppy seeds
- 40 ml rapeseed oil
- 2 eggs
- 1 and ½ tsp baking powder
- a pinch of salt

- 80 g plum jam (you can also use Jammy Spread)
- 30 g almond flakes

Instructions:
Mix flour with poppy seeds, sugar, baking powder, and salt. Add eggs, oil, and milk, then mix everything carefully and thoroughly. Pour the batter into a small baking tray (ours had dimensions 20×20 cm) and place it in the oven preheated to 180 °C for approximately 25 minutes, or until a toothpick comes out dry from the cake. Once the cake is done, take it out of the oven. While still hot, spread plum jam on top and sprinkle with almond flakes. Allow the cake to cool completely and then voilà, it’s ready to be served.
