- 300 g of sweet potatoes
- 250 g of broccoli
- 200 g of cottage cheese
- 50 g of parmesan
- 6 eggs
- 1 handful of fresh parsley
- 1 teaspoon of black pepper
- 1 teaspoon of dried herbs (basil, thymian,…)
- ¼ of a teaspoon of salt
- olive oil in spray

First of all, divide the broccoli into roses, and steam until soft. Then cut the roses into small pieces. Meanwhile, peel the sweet potatoes, cut them into thin wheels, salt them and season. Spray a little olive oil on the pan and fry the sliced sweet potatoes on a low heat until soft. In a larger bowl, mix cooked and chopped broccoli and roasted sweet potatoes together. Add cottage cheese, eggs, 20 g grated parmesan and mix thoroughly. Finally, add ground black pepper, dried herbs, chopped parsley and mix again.
Pour the mixture into a pan or baking dish suitable for the oven. Fill the frittata with the remaining grated parmesan cheese and bake it for about 20 minutes at 180 ℃ until golden brown. Take the baked frittata out, let it cool down a bit, cut it and serve! Yummy!
