Fitness recipe: Home-made Braided Brioche with Vanilla Flavour

Braided brioche is a traditional Christmas pastry in many countries, but we like preparing it anytime of the year too. We have even created its fit and macro-friendly version, which, in addition to the traditional taste, contains a good dose of protein. Do not hesitate and let’s prepare this holiday delicacy together!


  • 400 g of plain wholemeal spelt flour
  • 250 ml of warm water
  • 35 g of melted coconut oil
  • 30 g of True Whey protein with vanilla flavour
  • 30 g of cane sugar
  • 7 g of dry yeast
  • 1 tablespoon of vanilla Flavor Drops
  • 1 tablespoon of lemon peel
  • pinch of salt

First, mix flour, protein, sugar, yeast, lemon peel, and then add water, oil and flavor drops. Mix the dough well by your hand, cover it and put in a warm place for at least 30 minutes to allow the dough to rise well.

Then line the baking tray with baking paper and dust it with flour so that you can braid the dough directly on it. Divide the dough, roll one big and one small dough strands and place the small strand on top of the bigger one, and repeat. Meanwhile, dust your hands with flour so that the dough doesn’t stick. Before baking, sprinkle the braided brioche with slices of almonds or raisins.

Bake it for 5 minutes at 180℃, and then for 12-15 more minutes at 150℃. Let it cool down, slice it and serve with nut butter, jam or other favourite spread.
