Fitness Recipe: Flourless Chia Seed Carrot Pancakes

We would like to share with you exactly this type of recipe in form of flourless chia seed carrot pancakes to which we have added other ingredients beneficial to health, such as chia seeds, buckwheat and cinnamon. Treat yourself with them and enjoy a delicious breakfast!

Ingredients for the batter:

  • 120 ml unflavoured almond milk
  • 100 g boiled carrots
  • 70 g cooked buckwheat
  • 50 g banana (approximately ½)
  • 10 g chia seeds (1 tbsp)
  • 1 tsp baking soda
  • 1 tsp apple cider vinegar
  • ½ tsp cinnamon
  • coconut oil cooking spray

Firstly, cook the carrot until soft and mash it together with the banana. In a bowl, mix milk, cooked buckwheat, chia seeds, baking soda, apple cider vinegar, cinnamon, and add also the mashed mixture of banana and carrot. You can also add any kind of your favourite ground nuts into the batter. Mix everything thoroughly together until forming a smooth mixture.

Prepare a pan for pancakes and spray it with the coconut oil cooking spray. Bake the pancakes in a hot pan on both sides until golden. Finally, decorate them with fruit, carrots and pancake syrup, or your favourite nut butter. Enjoy!
