Even though the Swiss roll may seem complicated at first glance, don’t get discouraged. The preparation is really simple, so everyone should be able to handle it. The delicious combination of cocoa batter, quark cream, enhanced by fresh banana, is simply fantastic. And the chocolate on top brings its appearance to perfection.
Ingredients for the roll:
- 60 g fine flour
- 50 g cane sugar
- 10 g cocoa
- 4 eggs
- 2 tbsp water
- 2 tsp baking powder
- 1 tbsp rapeseed oil
- a pinch of salt

- 250 g soft fat-free quark
- 100 g cream cheese
- 2 larger bananas
- Vanilla Flavour Drops to taste

Method:
Start by preparing the Swiss roll batter. Separate the egg yolks from the whites into two bowls. To the yolks, add water and cane sugar, then whisk them into a thick, white foam. Next, add oil, sifted flour, cocoa powder and baking powder, and gently mix. In the second bowl, whip the egg whites with a pinch of salt until stiff peaks form. Carefully fold the whipped egg whites into the yolk mixture. Spread the batter evenly onto a large baking sheet lined with parchment paper and place it in the oven preheated to 180°C.
Bake for approximately 10-15 minutes. Whilst still hot, transfer the batter onto a dampened kitchen towel and gently roll it up, starting from the longer side. Allow it to cool down in this rolled-up form.
While the batter is cooling, let’s prepare the cream. Whip the quark together with the cream cheese and sweeten it to your liking with vanilla Flavor Drops. Once the Swiss roll batter has cooled down, carefully unroll it to form a rectangle. Spread the prepared cream evenly over the whole surface. Place peeled bananas side by side along the entire length of the cream-covered batter and roll it up tightly, again, starting from the longer side. At the end, drizzle it with melted chocolate. Before slicing, let it set in the refrigerator for at least 2-3 hours.
