This delicacy is a must-try for every lover of Asian cuisine. The combination of prawn, noodles and flavourful dressing is just great. It’s perfect for a quick post-workout dinner or a box lunch.
For the base, we’ll need:
- 200 g instant noodles
- 200 g peeled prawn
- 100 g carrots
- 2 spring onions
- 2 smaller onions
- 2 tbsp olive oil
- 1-2 chilli peppers
- 1 egg
- a handful of fresh coriander
For the sauce, we will need:
- 100 ml of water
- 50 ml almond butter
- 30 g coconut sugar (maple syrup can be used instead)
- 30 ml soy sauce
- 1 lime
To complete it, we will need:
- 20 g sesame seeds
- coriander to taste

Instructions:
Start by preparing the sauce. Mix the almond butter s coconut sugar or maple syrup, soy sauce, lime juice and water until smooth. Then, cook the instant noodles according to the instructions and set them aside. In a wok pan, cook 1 tbsp. of olive oil, fry the prawns on both sides and set them aside. Put the remaining oil in the wok, add finely chopped chillies, coriander stems, onion cut into eighths, carrot cut into thin strips and roughly chopped white part of a spring onion.

Fry the vegetables for a few minutes, add the noodles and gather everything into one part of the wok. In the empty part, crack an egg, make a scrambled egg, and when it is ready, mix it with the noodles and vegetables. Finally, add the prepared sauce, fried prawns, coarsely chopped coriander, green part of the spring onion and mix everything together. Serve on a plate, sprinkle with sesame seeds and enjoy.
