Pound cake is a traditional sweet pastry, which you certainly associate with the visit of grandparents or with a pleasant family atmosphere. If you haven’t eaten it for a long time because it’s high in carbohydrates and unhealthy fats, now you can make an exception. We offer you a fitness pound cake recipe in a healthy version using almond and coconut flour instead of white flour. You can replace the powdered sugar with a calorie-free syrup and a fluffy coffee pound cake just like grandma’s is done. Yummy!
- 55 g almond flour from ground almonds
- 20 g coconut flour
- 2 and a half of ripe banana
- 3 eggs
- 3 dates
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 strong espresso

Soak the dates in water to soften. The eggs should be removed from the refrigerator to obtain room temperature. Then whisk the egg whites until stiff. Meanwhile, mix the almond flour, coconut flour, banana, dates, baking soda and baking powder together with the espresso in the bowl. Mix the mixture thoroughly with a mixer to a smooth batter and gradually add the stiff egg whites. Pour the prepared batter into a cake pan. Then bake for 50 minutes at 170 °C. Serve topped with calorie-free syrup in your favourite flavour. Yummy!
