What would Easter be without some good sweet bread. Today, we also decided to add protein to it to increase its protein content. Sweetened with honey, it tastes even better than with sugar. Crunchy almonds on top bring it to perfection. Who could resist this sweet and fluffy delicacy?

Method:

Heat the milk in a pot or mug so that it’s warm but not too hot. Crumble the yeast into it, add 15 g of honey, mix it, cover it with a towel and let the yeast do its job. It will take approximately 15 minutes for the dough to rise. In the meantime, add flour mixed with salt and protein powder in a large bowl. Then add the activated yeast, the rest of the honey, eggs, ghee, finely grated lemon peel and make a firm and smooth dough. A food processor with a dough hook attachment can make kneading the dough significantly easier. If you don’t have it, use your hands and a wooden spoon.

When the dough has the right consistency, add raisins. Then cover it with a tea towel in a bowl and let it rise in a warm place for approximately 90 minutes. Knead it again a bit, shape it into a round loaf, return it to the bowl, cover it with a tea towel and leave it to rise for 30 more minutes.

When the rising time is over, carefully transfer the dough to a baking tray lined with baking paper. Brush it with egg wash, cut a cross in the middle and then sprinkle with sliced almonds.

Bake the bread until golden brown in the oven preheated to 180 °C. It will take about 30 minutes. To find out if it’s cooked, use a stick and poke it into the middle of the bread. If you pull it out clean, it’s done. If the dough still sticks to it, you need to continue baking.

When it is baked, wait until it cools down a bit and then it’s ready to be served. It tastes great on its own, or you can smear it with butter, jam, protein spread or nut butter to elevate its taste to another level.
