Do you want to indulge in a refreshing dessert during the summer? Then this cake is absolutely perfect for you. It consists of a soft base that pairs perfectly with a light cream. And the fruit used to garnish the dessert will make this delicacy even more refreshing. It goes wonderfully with iced coffee, and of course, you’ll enjoy it best while lounging by the pool.
Ingredients for the dough:
- 100 g all-purpose flour
- 50 ml semi-skimmed milk
- 40 g xylitol
- 20 ml oil
- 2 eggs
- 1 heaping TSP baking powder

Start off by cracking the eggs into a bowl, then add xylitol, and beat eggs until they form a thick, white foam (this should take around 3–4 minutes of vigorous whisking). Next, gently mix in the oil and milk into the foam, followed by carefully folding in the sifted flour combined with baking powder. Once the batter is ready, pour it into a cake pan lined with baking paper (our pan had a diameter of 20 cm). Then place it in a preheated oven at 180 °C and let it bake for approximately 25 minutes. To check if it’s cooked, simply insert a toothpick into the cake; if it comes out dry, it’s ready.
Afterwards, spread the cream over the cooled base, and let the cake rest in the refrigerator for at least 2–3 hours, ideally overnight. Before serving, you can garnish it according to taste. For instance, you can use fresh strawberries, raspberries, or mint.
This refreshing cake is perfect for the hot summer days, as it provides delightful refreshment. However, you can also enjoy it throughout the whole year.
