Instructions:

Start by preparing the batter for the roll. Whisk the egg yolks with the sugar until they form a light, fluffy foam. Then, gently fold in the oil and lemon juice. Next, add the dry ingredients – sifted flour, cocoa powder, baking powder, and beetroot powder, which will give the batter its colour. Whisk the egg whites with a pinch of salt until very stiff peaks form, then gently fold them into the batter in batches to keep it beautifully fluffy.

Spread the batter evenly onto a large baking sheet lined with parchment paper and bake for approximately 13 minutes at 180°C.

Immediately after removing it from the oven, while the sponge is still warm and flexible, carefully peel off the parchment paper and roll it up into a log. This will prevent it from cracking later when filling.
