Do you adore strawberries? In this cake, you clearly have to try this puffy protein roll! Besides great taste, you will enjoy it because of high protein content and only 72 calories per slice. Let’s do it!
For dough we need:
For cream we need:
- 250 g of soft curd
- 150 g of strawberries
- sweeting according to preferences (we used 30 g of honey)
- 1 TBSP of lemon juice

Let’s begin with separation of yolks from whites. Add coconut, protein, baking powder, water and erythrit to yolks. From whites, mix solid snow and then softly add it into yolk mixture. Put the baking paper on the sheet and pour the prepared dough into it. Consequently, put the dough into the oven and bake for 10 minutes at 180°C.
Let the baked corpus to cool down and prepare curd cream. Mix curd, lemon juice and sweeting into smooth cream and put it on the chilled dough. Slice few strawberries into halves and put them along on the left side of the cake. Slice the remaining strawberries into small pieces and put them on the cream evenly. Roll the dough slowly and gently. Let the roll rest in the fridge for at least an hour to solidify and then you can serve with fresh strawberries and grated coconut. Good appetit!
