Fitness recipe: Pasta with Alfredo cauliflower sauce

Pasta is one of the tastiest and fastest meals to prepare. And there are only two reasons why we love them. We today prepared pasta with the popular Alfredo sauce in a non-traditional vegan version. Prepare this simple and especially extremely tasty recipe with us!

  • 1 cauliflower (approx. 700 g)
  • 50 g cashew
  • 20 g nutritional yeast
  • 1 clove of garlic
  • 1 tbsp olive oil
  • lemon juice
  • salt and ground black pepper

Method:

First of all, we cut the garlic into cloves, which we bake in a peel in the oven for 15 minutes at a temperature of 180 ° C. We wash the cauliflower, cut it into pieces and fry it briefly together with cashew nuts in olive oil in a larger pot. Then pour water over the cauliflower (so that the whole cauliflower is immersed) and cook until soft (approx. 25 minutes). When the cauliflower is soft, pour the water into a bowl. Add the peeled roasted garlic to the cauliflower and blend everything together. Gradually add water, in which cauliflower has been boiled, to achieve the desired consistency of the sauce. Season the sauce with nutritional yeast, salt, ground black pepper and a little lemon juice. Finally, we prepare our preferred pasta and serve it with sauce, peas and parsley. Bon appetite!
