Fitness recipe: Juicy beef burrito with quinoa

  • 600 g of boiled beans (in a can)
  • 400 g of ground beef (up to 15% fat)
  • 300 g of strained tomatoes
  • 150 g of corn
  • 100 g of quinoa
  • 4×62 g of wholemeal tortillas
  • 1 avocado
  • 1 onion
  • 2 tablespoons of burrito spices (or salt + ground black pepper)
  • 1 teaspoon of salt
  • 1 teaspoon of olive oil
  • calorie-free ketchup (optional)
  • salad (depending on your preference)
  • grated mozzarella (depending on your preference)
  • sour cream (depending on your preference)

In a larger pot, fry the finely chopped onion. Add minced meat and mix for 2 minutes. Season the meat, add saltstrained tomatoes, cover it and stew with occasional stirring for about 15 minutes.

Pour twice the volume of water with quinoa, lightly salt it and cook until soft until it absorbs all the water (about 15 minutes). Meanwhile, squeeze the avocado on a puree with a fork.

After 15 minutes, add the pickled beans, corn to the meat and cook this mixture uncovered for another 5-10 minutes.

Finally, heat the tortillas (for example in the microwave or a pan), fill them with cooked quinoa, meat mixture, add a piece of avocado puree, sour cream, grated mozzarella, salad and carefully roll into the shape of a burrito. We can also smear burrito with calorie-free ketchup depending on your preference. Bon appetite!
