To prepare the dough we need:
- 60 ml of milk
- 40 g of spelled flour
- 15 g of natural sweetener Xylitol
- 15 g of Just Whey protein with vanilla flavor
- 1 whole egg + 1 egg white
- ½ tea spoon of baking powder
- lemon juice
First of all, we mix flour with protein, baking powder, egg yolk and milk. Then whisk the egg whites together with xylitol and a few drops of lemon juice until solid. Add about 3 tablespoons of solid egg whites to the prepared dough and mix very carefully so that the dough remains beautifully fluffy. Then add the rest of the whipped eggs and gently mix it with the dough.
Lightly spray the pan with olive or coconut oil and prepare the pancakes at the lowest temperature. Take one larger tablespoon from the dough, pour it into a pan and bake for about 2 minutes. Add another smaller spoon of dough to this pancake to make the pancake taller. Then pour about 1 teaspoon of water into the pan and cover the pan with a lid. After about 2-3 minutes, turn the pancake over, cover again with a lid and bake for another 3-4 minutes.
It is important to prepare pancakes at the lowest possible temperature so that they bake in the middle too. We proceed in the same way with the rest of the dough. Serve pancakes immediately after baking with fresh fruit, curd, or to taste.
