Fitness Recipe: Breakfast Egg Muffins with Cottage Cheese, Ham and Tomatoes

Ingredients:

  • 100 g cottage cheese
  • 100 g cherry tomatoes
  • 6 eggs
  • 50 g quality turkey ham
  • 30 g hard cheese
  • large handful of rocket
  • 2 sprigs of fresh thyme (or other fresh herbs)
  • salt and black ground pepper to taste
  • olive oil to grease the muffin moulds

Directions:

Mix the eggs with cottage cheese, chopped rocket, cherry tomatoes, turkey ham, salt, pepper and coarsely chopped rosemary. Grease the muffin moulds with oil and pour the prepared egg mixture. Grate the cheese on top of muffins and bake at 180 °C for about 20 – 30 minutes (until golden). Serve still warm and store the remaining muffins in the refrigerator. Bon appetite!
