Apple Pie

Ingredients for pie:

  • 4 apples
  • 3 tablespoons of smooth spelled flour
  • 3 tablespoons of cane sugar
  • 2 tablespoons of peanut butter
  • lemon juice from ½ of lemon
  • pinch of cinnamon
  • a pinch of ground ginger
  • a pinch of nutmeg

Ingredients fro dough:

  • 200 g oatmeal flour
  • 100 g butter or coconut oil
  • 30 – 50 ml cold water (as needed)
  • egg yolk
  • a pinch of salt and sugar

Methods of preparation:

  1. We start by preparing the dough. Cut the cold butter into small cubes, add it to the flour along with a pinch of salt and sugar. Using hands, make a dough. If a loose mixture has formed during the kneading process, pour water into it to obtain a soft dough.
  2. Leave the dough in the refrigerator for 20 – 30 minutes to solidify.
  3. In the meantime, prepare the filling. Peel the apples, cut them into thin wedges and place them in a bowl. There, sprinkle them with lemon juice.
  4. Mix 3 tablespoons of spelled flour with 3 tablespoons of sugar and pepper. Pour the prepared dry ingredients into a bowl of apples and mix thoroughly until the apples are coated in a flour mixture on both sides. Finally, add the peanut butter.
  5. Remove the solidified dough from the refrigerator and cut it into thirds. ⅓ use to cover the cake, the remaining ⅔ serve as the bottom of the cake.
  6. Roll the dough into a circle and place it in the mould. Add apple mixture to the inside of the cake.
  7. Roll the remaining ⅓ dough into a circle too and place on top of the cake. You can decorate the edges with a fork and cut the center.
  8. Coat the top of the dough with egg yolk and bake for approximately 15-20 minutes at 250 ° C. Be sure to watch the cake to be baked until golden brown.

Pumpkin muffins

Ingredients fro dough:

  • Hokkaido pumpkin or 300 g pumpkin puree
  • 320 g plain spelled flour
  • 135 g oat flakes
  • 150 ml agave syrup
  • 120 ml milk
  • 2 eggs (of room temperature)
  • 1 tablespoon of olive oil
  • 1 tsp baking powder
  • a pinch of ground ginger, cinnamon and salt

Ingredients for icing:

  • Xylite
  • 3 tablespoons of lemon juice

Methods of preparation:

This recipe is based on pumpkin puree, which you can either buy at the grocery store or prepare it yourself from the Hokkaido pumpkin. Peel the pumpkin, cut it in half and remove the seeds. Cut into smaller cubes and cook until tender, about 10-15 minutes. Mix the cooked pumpkin with an immersion mixer and the pumpkin puree is ready.

Mix dry ingredients – oat flakes, baking powder, pepper and flour. In the second container, mix liquid ingredientsagave syrup, oil, eggs and pumpkin puree. Add gradually the flour mixture to the liquid mixture. Mix, and if the mixture is too solid, dilute with milk. Fill the finished dough with muffins to about ⅔ full. Ingredients for corpus:

  • 175 g ginger biscuits
  • 2 tablespoons of peanut butter
  • 1 tablespoon of honey

Crush the biscuits and mix them with honey and peanut butter. A solid mixture is formed which is poured into a mould lined with baking paper. Spread the mixture on the edges of the mould.

Whisk the eggs into the foam and gradually add the remaining ingredients. Pour the curd cream into the mould on the biscuit base. Bake the cake in a heated oven at 180° C for about 50 – 60 minutes. Serve only after cooling. The finished cake can be decorated with nuts or fruit. Bon appetite!
