How can you incorporate more vegetables into your diet? A great option is this baked zucchini with meat, beans and corn, which you are guaranteed to enjoy. Plus, it’s super easy to prepare, so it’s great for those days when you don’t want to spend hours in the kitchen.
Ingredients:
- 400 g canned chopped tomatoes
- 150 g RTD black beans
- 100 g canned corn
- 60 g baby spinach
- 30 g Parmesan cheese
- 2 large zucchinis
- 2 cloves of garlic
- 1 can chicken breast in its own juices
- 1 TBSP olive oil
- water as required
- a pinch of ground chilli
- ground pepper to taste
- salt to taste
- fresh basil for garnish

Method:
Cut the zucchini lengthwise, hollow out the insides, season lightly with salt and place in a baking dish. Briefly fry the sliced garlic in olive oil. Add a little chilli, sliced tomatoes, chicken breast in its own juices, rinsed beans, drained corn and a little water. Mix everything together and simmer briefly. Finally, stir the baby spinach into the mixture and season with salt and black pepper. Fill the zucchini with the mixture evenly and sprinkle with grated Parmesan cheese.

Place in a preheated oven at 180°C and bake for approximately 25 minutes until tender. When the zucchini is still warm, garnish with fresh basil and serve.
