Ingredients for 1 cheese:
- 125 g cashew nuts
- 125 g potatoes (1 smaller piece)
- 100 ml water
- 75 ml of water used for cooking vegetables and nuts
- 60 g carrots (½ carrot)
- 1 tbs agar powder (you can replace with gelatin powder for the non-vegan version of the cheese)
- 1 tsp of salt
- ½ tsp of sweet pepper
- ½ tsp of tumeric
- juice of ½ lemon
- coconut oil in a spray

First of all, we cook cashew, sliced potatoes and carrots in the water. We cook it all until all the ingredients are soft. After boiling, store 75 ml of used water and strain the rest. Put the cooked ingredients and left water in a blender, where we also add the juice of lemon, salt, pepper and turmeric. We mix everything together until we get a creamy mixture.
Then dissolve the agar in 100 ml of water in a small pot and let it boil. Stir it continuously and cook for about 1-2 minutes. After cooking, add this agar mixture to the nut mixture and mix well until the two mixtures are completely combined. In the meantime, prepare a cheese mold or bowl, spray it with oil and pour the prepared cheese mixture into it. Let the cheese prepared in this way simmer overnight in the fridge.
If you want to grate the cheese, put it in the freezer for a few hours. You can use the cheese in a salad, for pizza, or as an appetizer. You can also enjoy it in a sweet way with fresh fruit and rice bread. When stored in the fridge, you can enjoy it all week long!
