The combination of soft and airy pastry with perfectly whipped cream will literally melt in your mouth. We guarantee that you won’t stop at just one piece. It might be a good idea to prepare a double batch of these profiteroles straight away.
Ingredients for the dough:
- 100 ml water
- 70 g plain flour
- 50 g butter
- 2 eggs
- a pinch of salt
Ingredients for the cream:
- 400 g soft fat-free quark
- 80 g white chocolate
- 30 g vanilla protein powder

Method:
In a small pot, bring water with a pinch of salt and butter to a boil. Add the flour and mix well until the dough comes together and starts to peel away from the sides of the pot. Transfer the dough to a stand mixer and knead it with a dough hook until it cools down. In a smaller bowl, beat the eggs and gradually add them to the cooled dough while the mixer is still running. The dough should be firm and not too sticky.
Take a piping bag with a decorative tip, fill it with the dough, and on a baking sheet lined with parchment paper, form small heaps of dough with a circular motion and sufficient spacing.
Place the prepared profiteroles in the oven preheated to 200 °C (392 °F) and bake for 10–15 minutes until golden brown.
Meanwhile, melt the white chocolate and gradually mix it into the quark. Then add the protein powder and whip the cream thoroughly. Fill the piping bag with the cream and use it to fill the chilled profiteroles (make a hole in the profiterole with the decorating tip and pipe in the cream). Allow them to rest in the refrigerator for at least 6 hours before serving. Before serving, melt the chocolate and drizzle it over the individual pieces.
