Making these couscous & cheese balls is incredibly simple, so really anyone can manage it. Once you had a taste, you’ll understand. Method:

Season the couscous with salt and cook it according to the package instructions. Once it’s done, mix in black pepper to taste and let it cool. Afterwards, add grated mozzarella, Parmesan, 2 eggs, 1 and a ½ teaspoons of thyme, a handful of chopped herbs, and 60 g of breadcrumbs to the cooled couscous. This will result in a compact mixture that you can shape balls from. Once you have the balls ready, coat them in the remaining breadcrumbs mixed with ½ teaspoon of thyme and a pinch of salt. Place the balls on a baking sheet lined with baking paper.

To finish off, spray them with olive oil and bake until golden brown for 30 minutes at 180 °C.
