The Swiss roll is a dessert that tastes as good as it looks. And this one turned out exceptionally. The base is a fluffy and moist cocoa dough, which will not break during rolling. Novice chefs will for sure appreciate this. We prepared the cream from curd cheese packed with protein and coconut, which will bring another dimension to the Swiss roll. And, of course, the chocolate coating couldn’t be missing! The roasted pieces of coconut on the surface are then just a cherry on top that will raise it to an even higher level. - 4 eggs
- 50 g xylitol
- 50 g fine spelt flour
- 10 g cocoa powder
- 1 tsp baking powder
- 1 tbsp lukewarm water
- a pinch of salt

- 500 g soft light curd cheese
- 20 g grated coconut
- 70 g xylitol
Ingredients for the garnishing:
- 100 dark chocolate
- 2 tsp coconut oil
- 15 g coconut chips

First, let’s prepare the dough. Separate the egg whites from egg yolks into two different bowls. Add a pinch of salt to the egg whites and whisk until solid. Pour 50 g of xylitol into the egg yolks, add a tablespoon of lukewarm water and whisk until you get a creamy foam. Then add sifted flour, cocoa and baking powder and mix with a spatula. Finally, carefully add the whipped egg whites. Now that the dough is ready, pour it into a large baking sheet lined with baking paper. Then place the baking sheet with the dough in an oven preheated to 180 °C and bake for about 10–15 minutes. After baking, carefully take a plate of dough, remove the baking paper and transfer it to a clean, damp cloth while still hot. Roll the dough and let it cool down.
In the meantime, prepare the cream to fill in the Swiss roll. Mix curd cheese, 70 g xylitol and grated coconut in a bowl.
Our tip: If you want your Swiss roll to have an even more intense coconut taste, you can add coconut protein, coconut flavour drops or coconut milk.
As soon the dough cools down, unwind it, apply the cream and firmly roll it back to form a roll.
And now let’s prepare the garnish. First, take a pan, heat it, and add coconut slices. Roast until slightly brownish. Then put aside.
Next, take a bowl and add chocolate and coconut oil. Melt them, either in a microwave or in a water bath. Then pour the chocolate coating evenly over the roll. Finally, take roasted coconut chips and sprinkle on the chocolate coating on the roll.

Before serving Swiss roll, let it solidify in the fridge for at least 2 hours to make sure it has a perfect consistency. And if you can’t wait, put it in a freezer, which will shorten the process.
