Start by preparing the dressing. In a bowl, combine Greek yoghurt, mayonnaise, lemon juice, honey, and salt and black pepper to taste. Mix thoroughly. Then add the pressed garlic and chopped coriander. Mix again and let it sit in the fridge.
Now, let’s prepare the potatoes. Wash them with water, pat them dry with a towel, and cut them into moon-shaped pieces. Place these prepared pieces in a bowl, add olive oil, salt, pepper, sweet paprika, and mix everything thoroughly. Prepare a baking tray lined with parchment paper, evenly spread the potatoes on it, and bake for about 25 minutes. Then flip the potatoes and bake for another 15-20 minutes until they become crispy and golden brown. Once out of the oven, immediately sprinkle them with coarse salt, fresh spring onions, parsley, and garnish with lettuce leaves.
Slice the chicken into strips, season with salt and pepper. Prepare a pan, spray it with cooking oil, and sauté the chicken until golden brown.
Now, all that’s left is to serve it as a meal. Arrange the potatoes, chicken, and dressing on a plate, and garnish as desired.
