Fitness recipe: Breakfast quinoa muffins

Quinoa is a wonderful super food that boasts of all 9 essential amino acids and is therefore a complete source of protein. As little as 1 cup of quinoa contains 8 g of protein, 5 g of dietary fibre, iron, magnesium, folic acid and omega-3 fatty acids that are good for a healthy heart. It has an anti-inflammatory effect and a positive effect on the heart and blood vessels. As it is gluten-free, quinoa is suitable for people on a gluten-free diet too.

Ingredients for 12 pcs of muffins:

  • 100 g ham (min. 85% meat)
  • 100 g of 30% cheese
  • 100 g quinoa
  • 100 g courgette
  • 3 eggs 
  • a handful of parsley

Method of preparation:

  1. Boil Quinoa (as well as rice for about 20 minutes in water) and pour off excess water. Grate the zucchini and cheese on a thick grater, cut the ham and fried bread into small pieces. Finally, mix everything in the bowl together with the eggs.
  2. Dispense into muffins moulds.
  3. Bake for about 30 minutes at 200° C.
