These vegetarian potato dumplings with marinated tofu are a nutritionally rich meal that keeps you full for longer, thanks to a decent proportion of fibre and protein. This combination of complex carbohydrates from potatoes and a generous filling will delight your taste buds.
For the dumplings we will need:
- 800 g potatoes
- 250 g coarse flour (+20 g for dusting)
- 1 egg

- 200 g marinated tofu
- 3 garlic cloves
- 1 onion
- 1 tbsp tomato paste
- 1 tbsp olive oil
- 1 tbsp smoked paprika
- 1 tsp ground sweet paprika
- salt to taste
- dried chilli to taste
For the sauerkraut, we will need:
- 700 g sauerkraut
- 1 onion
- 1 tbsp of olive oil
- 1 tbsp of cane sugar
- water for basting

Instructions:
Start with the preparation of the sauerkraut. Fry the finely chopped onion in oil until translucent, then add the rinsed sauerkraut and simmer until tender. Add water if needed and finish by seasoning the sauerkraut with sugar.
Meanwhile, prepare the ingredients for the finishing touch. Fry the onion, cut into small pieces, in oil over low heat. Stir occasionally during cooking, and when it turns golden brown, season with salt and remove from the heat.
Next, prepare the filling for the potato dumplings. Fry the finely chopped onion in oil until translucent. Then, add the finely chopped (or crushed) garlic, smoked paprika, sweet paprika, chilli and tomato paste. Briefly fry everything together, then add the tofu, crumbled into small pieces with fingers. Cook everything together and finally season with salt as needed. If the mixture seems too dry, add a little water.
Boil whole potatoes with their skins on in salted water until tender. Then drain and peel the potatoes, grate finely and mix with flour and egg. Form a dough, which should be almost non-sticky, roll it out thinly on a floured board and cut into 16 squares. Place a small teaspoon of filling in the middle of each square and shape the dough into small dumplings.

Cook them in boiling salted water until they float to the surface. Serve with the prepared sauerkraut and roasted onion.
