Fitness recipe: Mexican Stuffed Sweet Potatoes

Sweet potato is a big trend not only because of its great taste, but also because of amazing nutrient content, which is beneficial for our body. This is why we used sweet potatoes as the main ingredient with a delicious filling in our new recipe for all Mexican food lovers. Let’s prepare delightful baked sweet potatoes!

Ingredients:

  • 200 g minced meat (chicken, beef,…)
  • 2 medium-sized sweet potatoes
  • ½ canned sliced tomatoes (210 g)
  • 70 g canned corn
  • 70 g canned beans
  • 70 g tomato purée
  • 1 medium-sized onion
  • ¾ tsp ground caraway
  • ¾ tsp sweet pepper
  • salt, ground black pepper and chilli to the taste
  • olive oil in spray

  • water as necessary

Ingredients for decoration:

  • sour cream
  • fresh coriander
  • lime juice

Instructions:

Wash the sweet potatoes thoroughly, dry them, prick with a fork and then bake at 180 °C until soft. Meanwhile, prepare the filling. Spray the pan with olive oil, fry the finely chopped onion until tender and then add minced meat, and cook for a few more minutes. Add tomato purée and sliced tomatoes to the meat, and let it simmer for about 15 minutes. If necessary, add water/broth. Then add corn, beans and all spices to your taste. Simmer briefly the chilli filling to let flavours combine and then set aside. Cut baked sweet potatoes in half and softly press the flesh with a fork and add salt. You can now fill sweet potatoes with prepared chilli filling, top with a spoon of sour cream, coriander, sprinkle with lime juice and serve! Bon Appétit!
