Ordinary pancakes or crêpes can be a bit boring. That’s why we prepared this fluffy Dutch baby pancake that you bake in the oven, decorate, and enjoy as an extraordinary treat. The batter preparation is simple, and the result is definitely worth it.
Ingredients:
- 100 ml semi-skimmed milk
- 50 g plain flour
- 15 g ghee
- 10 g cane sugar
- 2 eggs
- a pinch of salt

- pistachio butter
- raspberries
- Greek yogurt
- fresh mint

Method:
Preheat a cast-iron skillet in the oven at 220 °C (428 °F). In a bowl, whisk eggs with semi-skimmed milk, then gradually add flour, salt and cane sugar. The batter should be completely liquid and without lumps. You can also use a blender to mix it.

Add the ghee to the heated skillet and return it to the oven for another 5 minutes. Then pour the batter into the skillet and bake the pancake for 10–15 minutes until golden brown. Turn off the oven and let the pancake rest inside for another 5 minutes to prevent it from deflating.
Serve the finished pancake with pistachio butter, raspberries or Greek yogurt. And of course, don’t forget the mint leaves, which will take the decoration to another level.
