- 1 avocado (150 g)
- 1 tbs soft quark without lumps (40 g)
- 1 small onion
- 1 clove of garlic

- 1 l water
- 10 ml vinegar

We will start by preparing a spread – we will prepare a ripe avocado – cut lengthwise, peel and remove the stone. Squeeze the flesh in a bowl with a fork and add finely chopped onion, cherry tomatoes and a crushed clove of garlic. Next, add soft quark, mix everything well and season with lime juice, salt and black pepper. Finally, mix in the chopped coriander. We continue to prepare the poached egg. Bring the water with the vinegar to almost boiling. By stirring (for example with spoon) create a whirlpool in the water and we pour the egg from the lowest possible height. Then let it cook for 3-4 minutes. We cook each egg separately.
Meanwhile, fry the bread on both sides until a little golden with a little olive oil. Then spread an avocado spread on the still warm bread, and place an egg on the top. Season with black pepper and salt, or decorate with chopped coriander. Bon appetite!
