Sticky toffee pudding is a traditional British dessert popular worldwide. This moist cake, wonderfully sweet and soft thanks to the dates, is perfectly complemented by cream cheese and caramel zero syrup. You’ll fall in love with it after the first bite.
We will need:
- 100 g pitted dates (can be replaced with date paste)
- 100 ml boiling water
- 70 g brown sugar
- 70 g whole spelt flour (+ 20 g for dusting the moulds)
- 40 g butter
- 1 egg
- ½ teaspoon of baking soda
- ½ teaspoon of baking powder
- oil spray for greasing the moulds
For serving you will need:
- 200 g low-fat cottage cheese
- vanilla flavor drops to taste
- zero syrup salted caramel

Preparation:
Cut the dates into smaller pieces, pour boiling water over them, and let them soften for 20 minutes. In the meantime, take room-temperature butter and whisk it with sugar until creamy, then slowly whisk in the eggs. Next, mix in the sifted flour, baking soda and baking powder. Blend the softened dates with the water until smooth and mix them into the dough. They can also be replaced with date paste. Grease small baking dishes with spray oil, dust them with flour, and layer the batter into them.

Bake the cakes at 180°C for about 20 minutes. Let them cool before removing them from the moulds and serve with cottage cheese, which can be sweetened with vanilla flavor drops if needed, and drizzled with zero syrup.
