Fitness Recipe: Traditional Potato Salad in a Healthier Version

Many of us can no longer even imagine their Christmas without the traditional potato salad. And that’s good! But what would you say about upgrading this recipe a bit to make it lighter and healthier? It won’t put a burden on your stomach that much and it will taste just as great. Are you in?!

Ingredients:

  • 600 g potatoes
  • 2 carrots (200 g)
  • 75 g sterilized/frozen peas
  • 75 g canned corn
  • 3 eggs
  • 4 pieces of medium-sized pickles
  • 250-350 g rustic white yogurt
  • pickle
  • salt and ground black pepper to taste

Instructions:

Cook washed potatoes and peeled carrots in salted water until tender. When the potatoes have cooled down, peel and cube them with a potato cutter. Cut boiled carrots and pickles into small cubes and add them to a large bowl together with potatoes. In the meantime, cook the eggs until hard-boiled (approx. 8 minutes). After they are cooked, let them cool, peel and cut into small cubes and add to the remaining ingredients. Then also add corn, peas, and yogurt. Mix the salad thoroughly and season with pickle, salt, spices, and mustard to taste. Delicious potato salad is ready and you can serve it at the Christmas dinner.
